L’Ecrin - As one of Paris’ best kept secrets, L’Ecrin is the hidden gem of Hôtel de Crillon, nestled in its heart. In a delicate and refined contemporary décor, guests are welcomed for an exquisite culinary journey to savor the inventive cuisine of Chef Christopher Hache. The gastronomic menu served at L’Ecrin reflects the personality of the Chef: refined, precise and sophisticated without sacrificing conviviality. At L’Ecrin, a bespoke approach was adopted for every detail. The Chef himself worked with artisans from all over the world to design custom-made chinaware and silverware that complement the guest’s gustatory journey. Textures, scents and colors make every visit to L’Ecrin extraordinary. Open Sunday-Monday and Thursday-Saturday, 7:30 to 10:00 p.m. Closed on Tuesdays and Wednesdays.
Brasserie D'Aumont - With a distinctive Parisian brasserie vibe, the team of Chef Justin Schmitt greets leisure travelers and Parisians with a timeless quintessential French cuisine inspired by the early past. Thanks to its modern unobtrusive approach, Brasserie d’Aumont features traditional dishes with a new look. The Chef has revisited a dish that dates back to a 1910 menu from the hotel: Tête de veau sauce Orly. Located in the heart of the hotel, this gathering spot features carefully selected ingredients and regional products, some of which are nowhere to be found in Paris, such as a unique breed of oysters from northern Brittany. Similarly, he has formed an agreement to receive a half carcass of beef on a weekly basis, allowing him to offer unique cuts of meat that no other restaurant offers in Paris.
Chef Justin Schmitt’s passion for art not only helped craft an original culinary experience, but was central in the way he envisioned a complete journey catered for Parisian foodies and travelers from across the world. In his menu, savors and shapes merge to deliver both a delight for the palate and a visual feast for the eyes. Open 7:00 to 10:30 a.m. for breakfast, 12:00 noon to 2:30 p.m. for lunch, and 7:00 to 10:30 p.m. for dinner daily.
