At L’Ecrin, a bespoke approach was adopted for every detail. The Chef himself worked with artisans from all over the world to design custom-made chinaware and silverware that complement the guest’s gustatory journey. Brasserie D'Aumont - With a distinctive Parisian brasserie vibe, the team of Chef Justin Schmitt greets leisure travelers and Parisians with a timeless quintessential French cuisine inspired by the early past. Thanks to its modern unobtrusive approach, Brasserie d’Aumont features traditional dishes with a new look. The Chef has revisited a dish that dates back to a 1910 menu from the hotel: Tête de veau sauce Orly. Located in the heart of the hotel, this gathering spot features carefully selected ingredients and regional products, some of which are nowhere to be found in Paris, such as a unique breed of oysters from northern Brittany. Similarly, he has formed an agreement to receive a half carcass of beef on a weekly basis, allowing him to offer unique cuts of meat that no other restaurant offers in Paris.
